An impromptu recipe for a cold night.
1/2 stick butter
1/2 onion chopped
1/4 cup flour
1 cup chicken stock- give or take
6 oz beer – we used Brewery 85 – local pale ale
Salt/ pepper to taste
8 oz. very sharp cheddar grated
Sautée the onion in the butter until translucent. Whisk in the flour and salt & peeper and stir over medium low heat. Allie to bubble gently for several minutes to cook out the starchy flavor. Add the beer, stir until it bubbles again then add 8 oz of stock. Cook until bubbling then add cheese and stir until smooth. Adjust seasonings and stock to desired thickness.
