Chocolate/ Vanilla Butter Cake

(Sept. ’82 Cuisine Magazine)


½ C. Cocoa Powder
¼ C. Sugar
½ C. Water
¼ C. Karo Syrup
Pinch salt
½ Tsp. Vanilla

Combine cocoa, sugar, corn syrup, salt and water in saucepan. Heat in heavy bottom saucepan over medium heat.  Stir until smooth. Remove from heat, add vanilla. Set aside to cool.

Cake Batter

 3 ¼ C. cake flour
2 ½ tsp baking powder
½ tsp. Salt
1 C. milk
2 ½ tsp. Vanilla
1 cup unsalted butter
2 cups sugar
4 Tablespoons King Arthur Cake Enhancer (sifted) * optional
4 eggs
¾ Chocolate Syrup (above)
**½ tsp. Baking soda- baking soda is added to syrup just before blending into batter

 1.  Preheat oven to 350°. Prepare 10” Bundt pan by spraying with pan release then lightly dredging with flour.  (Tap out extra flour.)
2.  Sift flour, baking powder and salt.
3.  Cream butter and sugar until fluffy. Add enhancer and blend if using. Add eggs one at a time.
4. Add vanilla to milk.

  1. Beginning and ending with flour add to creamed mixture alternating with milk/vanilla mix. 
  2. Pour 2/3 of batter into prepared pan.
  3. Stir ¼ tsp. Baking soda into chocolate syrup then add chocolate syrup to remaining 1/3 cake batter.  Pour over vanilla batter.  DO NOT STIR.
  4. Bake for 1 hr. then test for doneness.
  5. Cool on rack for at least 15 minutes.  Loosen edges of cake with knife, then remove from pan.  Cool completely.

Chocolate Glaze

3 oz. unsweetened chocolate
6 tbls. Butter
½ C. sugar
Pinch salt
1/4 C. milk
1 Tablespoon Cornstarch
¼ C. light cream
1 tsp. Vanilla

  1. Heat chocolate, butter, sugar and salt in small, heavy saucepan over low heat. Stir occasionally until chocolate and butter are melted and it is smooth. 
  2. Stir cornstarch into milk then add to cream.
  3. Pour cream mix into hot chocolate, heat until incorporated.
  4. Remove from heat and transfer to heatproof pitcher. Let stand for 2 ½ minutes.
  5. Pour slowly over cooled cake.
