Derby Pie from Best of Bon Appetit 1988

for 1 pie:
2 eggs
1 C. sugar
1/2 C. ap flour
1/2 C. (4 oz.) butter, melted
1 c. semi-sweet pieces
1 c. chopped (coarse) pecans
1 Tablespoon Bourbon

1 Teaspoon vanilla

Beat eggs at high speed in mixer with whisk attachment until lemony in color (3 Min.).  Add in sugar, beat until foamy.  reduce speed add flour, then butter and mix thoroughly.  Stir in Choc. chips, nuts, bourbon & vanilla.Pour in shells. (Pie will puff slightly.)
Bake at 350 for approx. 40 min. hour.
